At Marks & Spencer, the product development team are constantly looking for the next micro trends that could grow into commercial success.
A boutique cheese shop in London had started serving traditional fondues, whilst at Borough Market, (the UK’s leading fine food market), an established stall holder had built a huge following serving melted Raclette cheese. Building on these two micro trends I created a ready to bake cheese fondue that the customer had to simply pop in the oven. Even though fondues never blossomed into a full trend, being able to identify the popularity of melted cheese was enough to create an innovative and commercially successful product.
