During an innovation trip to Paris, I identified cheese that had been layered with fruit paste as a potential trend but something that probably wasn’t right for the Marks & Spencer consumer.  By combining another trend of cheese wedding cakes, I set about creating the Christmas Cheese Centerpiece that had a real wow factor.   I used a Blacksticks Blue cheese truckle and paired it with a fig and date glaze,  topped with dried fruit It was sold as a  limited edition Christmas product.
